Ingredients
- 1 1/2 pound(s) Haddock
- 1 pound(s) Swiss chard
- 1/2 cup(s) parsley minced
- 2 tomatoes chopped
- 2 teaspoon(s) tarragon
- 2 tablespoon(s) garlic minced
- 1 large onion chopped
- 1 tablespoon(s) olive oil
- 1/4 cup(s) water
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) black pepper
- 1 tablespoon butter
Cooking Instructions
Separate chard leaves from stems. shred leaves and slice stems crosswise.
Saute chard stems in oil over medium high heat, add tomatoes, onion and parsley, garlic and tarragon. season with salt. Cook for a few minutes until tomatoes release a little juice. Add butter and remove from heat.
Sprinkle fish with salt and pepper and bake for 10-15 min. at 400 or until fish just flakes.
Place chard mixture on a plate, top with fish and serve.
