Ingredients
- 1 cup organic rolled oats
- 1/2 cup cooked quinoa, 1/4 cup dry - follow directions on package
- 3/4 cup whole almonds, raw, coarsely chopped
- 1/2 cup dried blueberries, unsweetened
- 1/4 cup sprouted pumpkin seeds, or raw
- 1/2 cup pistachios, raw
- 1/3 cup flaxseeds, ground or meal, not whole
- 1/3 cup walnuts, raw, coarsely chopped
- 1/4 cup sunflower seeds, raw
- 1 teaspoon ground ginger, optional
- 1/2 teaspoon ground cardamom, optional
- pinch cayenne, optional
- 1/3 cup maple syrup or honey, real maple syrup or filtered honey
- 1/4 cup apple sauce, unsweetened
- 1 cup almond butter, unsalted, no added ingredients
- 1/2 cup shredded coconut, lightly toasted
Cooking Instructions
1. Combine and mix the first 12 ingredients in a large bowl.
2. Add maple syrup or honey and apple sauce and mix until combined.
3. Add almond butter to the mixture and mix until combined.
4. To make the balls, divide the dough into 20 even portions. With your hands, squeezing firmly, roll the portions into balls. Then roll the balls in the toasted coconut. Place on a tray and put in the refrigerator for one hour. Once chilled through, these can be put into an airtight container or plastic bag.
5. The balls will keep in the refrigerator for one week and in the freezer for 2 months.
