Ingredients
- 1 each lemon, halved crosswise, seeds removed
- 4 cloves garlic, smashed
- 2 bunches Asparagus, ends trimmed
- 4 tablespoons olive oil
- to taste salt and pepper
- 1/2 cup parmesan cheese, finely grated (OPTIONAL)
Cooking Instructions
Heat oven to 425 degrees.
1. Thinly slice half the lemon into rounds and set the other half aside.
2. Toss lemon slices, garlic and asparagus with the olive oil on a baking sheet.
3. Season with salt and pepper, making sure everything is evenly coated, especially the asparagus tips so they get fried and crisp.
4. Sprinkle with Parmesan and roast until the asparagus is bright green, starting to char and the cheese is golden brown, 10 to 15 minutes.
5. Remove from the oven, squeeze the remaining half of the lemon over the top and serve.
