Sparkling Strawberry Pineapple Mocktail with Mint, Lime and Spice

  • 1 limes, quartered
  • 1/2 cup fresh mint, leaves, keep some for garnish
  • 1 tablespoon brown sugar
  • 1/2 cup pineapple, or melon, finely chopped
  • 3/4 cup strawberries, finely chopped
  • 1/8 teaspoon ground ginger
  • 1/2 pinch cayenne
  • 3 cups sparkling water, or sparkling wine
  • 3 ounces alcohol of choice, optional
  • 8 ounces ice

Cooking Instructions

Squeeze limes into a large pitcher; add squeezed lime quarters. Add mint and sugar; mash well with a wooden spoon until the sugar is dissolved, about 20 to 30 seconds.

In a blender, puree strawberries and pineapple with the spices, or mash with a potato masher in a bowl. Stir the mixture in the pitcher to combine.

Add ice, alcohol of choice, and top with sparkling water or sparkling wine. Garnish with lime and mint leaves.
