Homemade Egg-less Wheat Chinese Noodles

Ingredients

  • 1⁄4 tsp salt
  • 1 tbsp oil
  • 2 cups all purpose flour
  • 3/4 cup water, + 1-2 Tbsp depending on consistency

Cooking Instructions

1. Add salt and oil to the flour and mix well. Add water a little at a time to create a dough. Knead dough and form into a ball.

2. Leave the dough rest for 10 to 15 minutes.

3. Divide dough into 3-4 portions. Flatten each portion separately and dust flour generously before folding it into 3 sections.

4. Cut the noodles into strips to your desired size. Know that the noodles will double in size when cooked. A good size is about 1/8″ (3 mm) thin.

5. Sprinkle the cut noodles with flour and gently shake them around with your fingers so that they unfold into long strands.

6. Cook or Save for later
If you want to store the noodles, allow the separated noodles to rest for an hour before packing them.

It may be kept refrigerated for up to 2 days or frozen for up to 6 months.

When ready to use, cook noodles in boiling water with a little salt.
