Beet and Berry Power Smoothie

  • ½ ea Medium Beet
  • 2 ½ cups Strawberries or Blueberries
  • ½ cup Raspberries or Seasonal Fruit
  • As desired Pea Protein Powder
  • 2 Tbsp Coconut Oil
  • 1 cup Microgreens or Arugula
  • 1 head Romaine Lettuce
  • ½ Avocado
  • 3 Tbsp Local Honey
  • 6 leaves Fresh Basil
  • 3-4 Ice Cubes (to keep cool while blending)

Cooking Instructions

Process all ingredients in a blender until very smooth. The ice is optional and the quantity may be varied to obtain a desired consistency. The smoothie is best when served immediately, though will last up to two days in the refrigerator.
