  • 1 Tbsp Olive Oil
  • 4 Tbsp Shallots, thinly sliced
  • 3 cloves Garlic, minced
  • 1 medium Butternut Squash, peeled and spiralized
  • 6 cups Mushrooms, sliced ¼ inch
  • 1 Tbsp Fresh Thyme, leaves roughly chopped
  • ½ Tbsp Fresh Oregano, leaves roughly chopped
  • 1 tsp Cumin, ground
  • For the Clam Wine Sauce
  • 2 lb Clams fresh, or canned.
  • 1 tsp Garlic Powder, or 2 Garlic Cloves, minced
  • ½ cup White Wine, or stock
  • 3 Lemons, 8-10 wedges for serving
  • 2 Tbsp Parsley, chopped for serving
