Vegan Tofu Scramble Breakfast with Avocado Toasts

Ingredients

  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 1/2 cups button mushrooms, sliced thin
  • 1 red pepper, small diced
  • 1/2 yellow onion, small diced
  • 2 cloves garlic, minced
  • 2 tablespoons nutritional yeast
  • 1 454g block medium-firm tofu
  • 1 19oz can black beans, drained and rinsed

Cooking Instructions

Mix all of the spice ingredients into a bowl and stir to combine. keep the nutritional yeast separate to add later.

Heat a large skillet over medium-high heat. Add the olive oil. then add the mushrooms, pepper, onion, garlic, and spices and sauté for about 5-7 minutes stirring occasionally until you start to see some brown color on the veggies.

Add the tofu blocks and break it apart with your spoon until you get a nice scramble texture.
You can keep it chunky or break it down if you prefer. Stir in the nutritional yeast and black beans. Heat through stirring often for another 4-5 minutes until hot.
