Heart Healthy Gazpacho

A vegan gazpacho with plant-based protein, specifically crafted for heart health with the inclusion of celery root and celery which are supportive for heart vessels. Also includes healthy fats from avocado and cold-pressed oils, a variety of nutrient-dense fresh herbs and the anti-inflammatory benefits of ginger. Serve it as a smoothie or as part of a summer meal.

Ingredients

  • 1 green apple
  • 2 stalks celery
  • ¼ celery root, each grated
  • ½ medium cucumber
  • ½ avocado, medium
  • 1 handful Fresh Basil
  • 1 cup cold water, or Ice
  • 1 ½ tablespoon red wine vinegar
  • 1 tablespoon lime juice
  • ½ each jalapeno, (optional) minced
  • 1 tsp Fresh Ginger, peeled and grated
  • 1 small handful cilantro, herbs - dill, (or combination) parsley
  • 2 tablespoon hemp seed
  • ½ bunch parsley, fresh chopped (for garnish)
  • To taste Sea Salt and Pepper
  • Optional Herb Mignonette
  • 1 1/2 tablespoon Parsley, chopped
  • 1/4 cup red wine vinegar
  • 1 tablespoon minced shallot

Cooking Instructions

1. Blend ingredients together in a high-speed blender. Chill for 2 hours before serving or eat right away for optimal nutritional benefits.

2. Garnish with fresh herbs and enjoy!
