Beet and Berry Power Smoothie

A vegan smoothie with plant-based protein, healthy fats, packed with antioxidants, cleansing for the liver and just a touch of natural sugars from local honey for a little additional sweetness and potential seasonal allergy support.

Ingredients

  • 1/2 ea beet
  • 2 ½ cups Strawberries or Blueberries
  • ½ cup Raspberries or Seasonal Fruit
  • 6 tablespoons pea protein powder, as desired
  • 2 `tablespoon coconut oil
  • 1 cup Microgreens or Arugula
  • 1 head Romaine Lettuce
  • ½ Avocado
  • 3 Tbsp Local Honey
  • 6 leaves Fresh Basil
  • 3-4 Ice Cubes (to keep cool while blending)

Cooking Instructions

1. Process all ingredients in a blender until very smooth. The ice is optional and the quantity may be varied to obtain a desired consistency.

Serving Instructions

The smoothie is best when served immediately, though will last up to two days in the refrigerator.
