Beet and Berry Power Smoothie

A vegan smoothie with plant-based protein, healthy fats, packed with antioxidants, cleansing for the liver and just a touch of natural sugars from local honey for a little additional sweetness and potential seasonal allergy support.

Ingredients

  • 3 3/4 eas beet
  • 18 3/4 cups strawberries, or blueberries
  • 3 3/4 cups raspberries, Seasonal Fruit
  • 45 tablespoons pea protein powder, as desired
  • 15 `tablespoons coconut oil
  • 7 1/2 cups microgreens, or Arugula
  • 7 1/2 heads Romaine lettuce
  • 3 3/4 avocado
  • 1 1/3 cups plus 3 1/2 teaspoons honey, local
  • 45 leaves fresh basil
  • 30 ice cube, (to keep cool while blending)

Cooking Instructions

1. Process all ingredients in a blender until very smooth. The ice is optional and the quantity may be varied to obtain a desired consistency.

Serving Instructions

The smoothie is best when served immediately, though will last up to two days in the refrigerator.
