Green gazpacho

Spiced Green Gazpacho

Ingredients

  • 2 cups English Cucumber, diced
  • ½ each Avocado, medium dice
  • ½ each Jalapeño Chili, halved and seeded
  • 1 Fennel, bulb chopped
  • 1 Granny Smith Apple
  • ½ bunch Fresh Basil, leaves only
  • ½ bunch Mint, leaves only
  • ¼ cup Apple Cider Vinegar
  • 1 Lime, juiced
  • 2 tsp Turmeric, fresh ½ inch (or 1 tsp ground)
  • ¼ tsp Fresh ground black pepper
  • 4 tablespoons broccoli sprouts, for garnish, optional

Cooking Instructions

Blend all ingredients in a blender with enough water to make smooth. Season with salt and pepper to taste. Keep chilled until it is time to serve.
