Ingredients
- 1 1/2 pound(s) tomatoes peeled seeded and chopped
- 1/3 cup(s) red onion finely chopped
- 3 basil leaf
- 1 garlic clove minced
- 1 cup(s) cucumber peeled and finely chopped
- 1 1/2 cup(s) tomato juice
- 1/2 cup(s) roasted red pepper
- 2 tablespoon(s) red wine vinegar
- 1 teaspoon(s) Worcestershire sauce
- 1 teaspoon(s) olive oil
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) black pepper
- 4 teaspoon(s) parsley chopped
Cooking Instructions
Combine first 4 ingredients in processor, add 3/4 cup cucumber. Pulse until coarsley pureed. Combine pureed mixture with the next 6 ingredients. (juice through black pepper) stir well and chill for at least 2 hours before serving. Optional toppings: Grilled shrimp, avocado slices, toasted croutons.
