Gazpacho with Roasted Peppers

Ingredients

  • 1 1/2 pound(s) tomatoes peeled seeded and chopped
  • 1/3 cup(s) red onion finely chopped
  • 3 basil leaf
  • 1 garlic clove minced
  • 1 cup(s) cucumber peeled and finely chopped
  • 1 1/2 cup(s) tomato juice
  • 1/2 cup(s) roasted red pepper
  • 2 tablespoon(s) red wine vinegar
  • 1 teaspoon(s) Worcestershire sauce
  • 1 teaspoon(s) olive oil
  • 1/2 teaspoon(s) salt
  • 1/4 teaspoon(s) black pepper
  • 4 teaspoon(s) parsley chopped

Cooking Instructions

Combine first 4 ingredients in processor, add 3/4 cup cucumber. Pulse until coarsley pureed. Combine pureed mixture with the next 6 ingredients. (juice through black pepper) stir well and chill for at least 2 hours before serving. Optional toppings: Grilled shrimp, avocado slices, toasted croutons.
