Turkey Taco Salad and Tortilla Chips

Ingredients

  • 8 ounces ground turkey
  • 1/2 package taco seasoning
  • 2 cups black beans, drained and rinsed
  • 2 corn on the cobs, corn removed or can use canned corn (2 cups)
  • 1/4 cup english cucumber, seeded and diced
  • 1 cup jicama. diced
  • 1 cup grape tomatoes, cut in half
  • 1/4 cup of red onion, diced fine
  • 2 jalapenos, seeded, membranes removed and diced fine
  • 1/4 cup red bell pepper. diced fine
  • 1 teaspoon of cumin
  • 1 15 ounce can rotelle tomatoes(with chilies)
  • salt and pepper to taste
  • 16 ounces tortilla chips

Cooking Instructions

Cook turkey. When brown, add taco seasoning and water according to the package. Remove from the heat and allow to cool.

Place all of prepared veggies in a bowl. Add cooled ground beef. Season with cumin and salt and pepper to taste and mix well.
Chill and enjoy with tortilla chips.
